Super Easy Taco Pie

I know, doesn’t sound too amazing. Really though it’s so worth it! It’s cheap and took about 1 hour to make including prep time, well there really is no prep.

1 lb lean beef, can use turkey for less calories
1 lg onion chopped
1 cup Cheddar cheese or taco cheese mix
1/2 cup Original Bisquick Mix
1 cup milk
2 eggs
1 packet taco mix
1 4 oz can diced green chilies

Heat oven to 400 and spray a 9 in glass pie plate w/ cooking spray
Cook meat w/ the onion until meat is brown, DRAIN
Stir in taco mix DRY, do not add water even if the taco packet calls for it
Spread in the bottom of the pie plate and top w/ green chilies
Whisk the Bisquick, eggs and milk in a small bowl and pour over the top of the meat
Bake for 25 min, until a knife inserted in the middle comes out clean
Top with the cheese and bake for another 10
Let rest for 5 before slicing
Top with sour cream and salsa

One serving is just 305 calories, which you can probably get down even lower if you use ground turkey, fat free cheese, skim milk and fat free sour cream. I’ve used turkey in place of beef in a lot of recipes including tacos and it tastes just as good!

If you know me at all you know I used more than 1 cup of cheese, shhh it had to be covered and smothered to look right! Be careful because when cheddar cheese melts it gets greasy. When I pulled the pie out I used a paper towel to soak up any extra, unwanted grease.

1 pie made enough for dinner last night and 2 lunches today

UPDATE: I made this again. This time I used 1.5 lbs of meat (it’s all they had), 2 packets of taco seasoning and 1 can of Rotel Tomatoes and Peppers. I added the Rotel while the meat and onions were cooking so that I could drain off all the extra liquid at the same time. This and the extra seasoning added a ton more flavor and we enjoyed more than the first time!
